The wine catalogue is dominated by the scents of Langhe and Roero, such as the Barolo Mantoetto di Fracassi,
which represents the smallest DOCG in Monferrato and the only vineyard in the municipality of Cherasco.
In September 2016, the Da Francesco Restaurant was selected among the Maisons Recommandées by Perriet Jouer, an exclusive champagne brand distributed in Italy by Antinori. This circuit includes a small number of other wine bars and restaurants whose love for the author’s bubbles from the French company is expressed in the same quality with which champagne is produced. From high quality vineyards, Perriet Jouer is synonymous since 1811 with great elegance in the millesimato. Compared to a “thousand face diamond”, this champagne is rich in floral nuances, the result of research at the limit of perfection. It is enough to think that in its 200 years of life only 7 Chefs de Cave, jealous custodians of their profession, have succeeded each other. Hervé Deschamps has spent 10 years of his life behind the guidance of his mentor André Baveret since 1993 to learn about every technique as if it were his own and to take Nicolas Perrier’s original vision forward over time. Each cuvée is something unique in its kind, both in the technique of assembly and packaging, and carries the creative charm of wine in a piece of art: the bottle designed by Emile Gallé in 1902. That’s why the style of the Maison closely recalls the Belle Epoque: Art Nouveau’s way of blending class and sweetness and offering intense moments of pleasure and beauty.
